FOG Surveys Being Sent to All Dothan Food Service EstablishmentsMatt Boster

As part of the EPA’s Administrative Order on Consent, the City of Dothan is required to develop a program to control the introduction of fats, oils, and grease (FOG) into the wastewater collection system. FOG is a serious problem for the city and is the cause of many of the sanitary sewer blockages and overflows we have experienced. In response, the City is developing an ordinance, which is expected to be a major part of addressing this problem.
Starting Friday, June 6, 2014, the city is sending a survey to all food service establishments licensed in the city. These include: restaurants, churches, schools, hospitals, nursing homes, nutrition centers, summer feeding programs, seasonal concessions, day cares, bakeries, delicatessens, grocery/retail food stores, meat markets, convenience stores, caterers, mobile food vendors, lounges, bars, etc. The survey will help the city understand what grease interception equipment is currently in use and what the operational practices have been. This information will help the city determine probable FOG volumes that will require treatment and disposal.
During the next few months, a FOG program representative will visit each food service establishment to review and/or collect the surveys, discuss facility operations and grease control practices and to distribute educational material on the City’s FOG program.
